SHRIMP in Cream Sauce..And nutrition chart

It came up on a website I had never seen..a diet review site..I calculated it a bit differently I think..and I feel whatever way of  keeping trackI use..it is important for me to "know" what I am doing.


I realize that I can go off track..and I like to keep me in check.

THE NO NOODLE

Popcorn and a movie...

One of the things that I still have is popcorn at the movie theatre.
I have it loaded with butter and shakey cheddar cheese.
It is the mindless munching movie watching pattern.
I actually bought pepperoni to snack on during a film one time. Not the same..!
LCHF is not inflexible.
After all...this is a lifestyle and social interactions are important.
There are Holiday parties and special events going on and adapting to conditions is all part of the mix.

Today I started with a cheese omelet and bacon at the local diner, some macadamia nuts as I was out and about.

The movie popcorn (took me over my normal carb count) and had the snack/dinner shown here.

Leftovers...and remembering a childhood favorite


I was attending a holiday event and the leftovers were being taken care of.


"Anybody want to take the leftover prime rib ?"


(IT was very fatty and not going to be saved,was going to be tossed)


My LCHF brain was jumping up and down for joy...TOO MUCH FAT???


I don't think so...and home I went  with the treasure...


Today I garlic buttered the cast iron skillet and fried the booty up.


The fried fat was just the ticket.!


As my mother had done I added water to the pan to get the drippings to make


a forgotten food ..the unflowered "gravy" she used to make.


So..as I was eating and dipping the meat into this ...I remembered as a child..


The memories of food that I thought was DELICIOUS...these were high fat!


Lettuce sandwiches were actually me getting mayonnaise,


The picking of the ham bits during Holidays was seeking the burnt fat bits,


Chicken BBQ was a quest for the crispy skin mostly.


I was scraping the pan to make "MOM'S GRAVY"...


I think my body has been craving the fat forever...and got side-tracked by carb addiction.


It is :FOOD for THOUGHT............and My leftover lunch was satisfying and delicious!

Watch out

Be very skeptical of special “low-carb” products, such as pasta or chocolate. Unfortunately these products usually work poorly. They have prevented weight loss for loads of people. They’re commonly full of carbs once you see through the creative marketing.
Bad FoodThere are dozens of companies trying to trick you into buying their “low carb” junk food, full of starch, sugar alcohols, flour, sweeteners and strange additives.
One of the largest such companies was recently fined 8 million dollars for shamelessly lying about the carb content of their products.
Two simple rules to avoid this junk:
  • Don’t eat “low carb” versions of high carb stuff, like cookies, bars, chocolate, bread, pasta or ice cream – unless you are SURE of the ingredients (perhaps from making it yourself).
  • Avoid products with the words “net carbs” on them. That’s usually just a way to fool you.

Buffet choices..hmmmm !

I liked the nutritional idea of the beer battered fried Haddock...
so   take the breading off and wrap it up in a napkin for discard..The fish was tasty I needed to get the crispy breading out if sight and into the "garbage" realm because I am aware of my temptation to unwrap it and devour the crusty stuff.

Compare a LCHF meal to a fast food meal from the past

I had the thought that it would be interesting to compare this LCHF cauliflower skillet "PIZZA" to a  dinner that I have had in the past.So..as with the foods from childhood..I logged the Burger King meal into a blank day on my FITDAY site.

the BURGER KING meal 170 carbs...a TRUE WHOPPER! The  calories are another story.

BACOFFEE...Fun treat on a frigid day


 THE SNOW HAS LANDED !!


NORTH COAST FUN !!  On the shores of Lake Ontario it is winter weather with wind,slippery roads and snow shoveling.


Coming in from the chilly conditions it was time to warm up.


WHAT TO HAVE AS AN ALTERNATIVE TO HOT CHOCOLATE???


COFFEE with whipped cream,a shot of BRAIN OCTANE oil and topped with some Bacon Bits !!

WHAT CHANCE DID I HAVE ?...MY TYPICAL DAY OF EATING IN SECOND GRADE


GRADE SCHOOL MENU
I often "think" in drawings.


I was remembering a typical day of my food intake from second grade.


Toast and cocoa with oleo before school, chocolate milk morning snack at school,a baloney sandwich and a nickel in the bag for a Fudgescickle,and chocolate milk for lunch,a snack of oyster cracker and peanut butter after school snack,a hamburger sandwich with chocolate cake for dinner,and maybe some popcorn watching tv in the evening with soda and koolade

so what chance did I have at having a normal size body? A little kid eating (+) 2300 calories,no vegetables,(+) 250 carbs per day...........who knew???

I was curious as to what the numbers would come out as ..so I went to FITDAY and used a blank day to record this food from my past...AMAZING !!

I see the pattern of addiction to sugar and carbs was well on it's way......add the candy bars and soda that came later and the POTATO CHIP...WOW!!

CHILDHOOD OBESITY  ..as far as I can remember and from photos...pre-memory...

The body did the best it could with the food information it was given...

I feel grateful to be able  to give it new information in the form of  a LOW CARB HIGH FAT lifestyle.
Along with intermittent fasting (usually a eating window of 8 hours)...I think my body is getting a well deserved rest and recovery from the sugar addiction it has been dealing with for over 60 years.

NO COOK SHRIMP CONCOCTION and the SUNDAE

 I was in a local $$ discount store wandering around looking for low carb possibilities. What can I get here to show people that it can be easy to do low carb and low cost.
My cupboard at home had the nutritional yeast, curry, nuts and seeds.The Spanish section of the store offered some fun ingredients to play with:
guacamole salsa
Giardiniera  (pickled mixed vegetables)
coconut milk


 I thawed the shrimp...poured the coconut milk (1/3 c.= 3gms.)  add the rest of the ingredients  (cross my fingers.)


This is a food experiment for sure.


I am thinking while concocting" I am putting a curious mix of ingredients together here. I have no clue how it will taste"
Some carbs are from the coconut milk , a few cashew nuts,  nutritional yeast, a little curry powder (have to look curry up),the alfalfa sprouts


Tasty and fast, ,a surprise treat. It was good!


I had it cold for lunch ..and then warmed it up for dinner.....either way was fine.


I am eating  different combinations of flavors on LGHF.


I don't try to make things that are going to taste like foods that I was "addicted" to. ,like chocolate cake or potato chips .. ice cream.. the list goes on  ...............
THE SUNDAE



I find myself looking for new foods that are low in Carbs and high in healthy fat  to nourish and support this body .It surprises me sometimes to be in a grocery line and realize that the candy has no draw for me.I see the wrapping and notice the colors and fun looking packages and it isn't registering as FOOD.


Now.. that being said .. I was at a party where I wanted to be social and enjoy the treat someone had brought,,, ingredients for make your own hot fudge sundaes,this was early in my LCHF weeks ,It came to me that I could do low carb in the situation, and BINGO!
Bowl + whipped cream  + peanuts = sundae
The variation shown is Whipped Cream with almonds and bacon bits.




Olives for example...never ate green olives before...when in SPAIN...they were everywhere..so I acquired a taste for them.. very satisfying, no carb snack now...Interesting to notice.
I read the lable...ahh! there is a clue as to the reason I am now drawn to the OLIVE.I was surprised to find that FAT is the primary macro.Almost all of the calories come from fat,Lots of vitamin E as well.Cool!  That tells me why they are a satisfying snack for me now.

Long story short...many people have set points logged into memory and 192 was embedded in mine.
Almost 40 years up to 320 ..down to 210..back up to 289 ....
Calorie restriction attempts and struggling for a lifetime has been the tale.

WEGMANS (A BIG GROCERY CHAIN) HAS A GREAT BUFFET BAR WHERE LOW CARB CAN BE DONE  QUITE WELL. AS SHOWN BELOW IN THE NUTRITION AND NUTRIENT CHARTS AS LOGGED ON FITDAY.COM.   AS FAR AS THE NUMBERS GO,MY INTENT IS TO PAY ATTENTION TO THE CARBOHYDRATE COUNT .

I count the carbohydrate and fiber. Lately, I am doing Total carbs. I try to have 20-30 grams/day. When I started a year ago I was counting NET carbs which is Total carbs (-) fiber.
I have used FITDAY.com for years so I have a idea of portion size and have a bank of custom food organized within the site ,,and it works for me.I like the desktop version and have not found the app to be easier for me.

The graphics shown are pics I snapped from my computer screen. It might be hard to read and it is the best that I can figure out with my limited computer skills. Screenshots from the app might have worked and the format on the app isn't as nice as the desktop versions. There are several sites for calculating nutrition. I find the keeping track is helpful for my part. I notice the calorie count and am not using calories as my primary focus.
Using the calorie restriction and FITDAY  in 2006,I lost 100 pounds...the CARB CREEP brought  the weight back over the years and Dr. Jason Fung has great information in his Blog and videos that can be accessed through DIET DOCTOR.COM

NUTRITIONAL YEAST...YUM!!!




ONE OF MY FAVORITE FOODS is Nutritional Yeast.


I get it in bulk usually at Natural Food Stores.


For photo nutrition label info,I got a container of BRAGG to show here.

I make a sauce sometimes with butter and yeast flakes. 

It has a cheesy/nutty flavor.

When I was eating popcorn..it was great to sprinkle on top.

There are some carbs in a serving..and some  protein  and

fiber as well.

I once had a cat that was crazy about the yeast.


I would find Stumpy up on the kitchen counter opening the


 cupboard and tearing into the bag...Hmmm...! Her littermate

CLEO had no interest in eating it.


                        I have found that with some friends as well.


                        I love it...........some not at all interested...Go Figure!

                                                        Check the nitrition on the product you are using..I have noticed some variation in the calculations of carbs and protein and serving size.

On the road food can sometimes be a challenge...there are options that work just fine..Convenience stores always have a package of nuts..maybe some cheese..water ,of course..Grocery store deli counters can be carb loaded.Picking up a salad andding a few nuts can work.


Many of the  fast food hot spots are getting LCHF friendly...In Spain I got a great BACON DOUBLE CHEESEBURGER without the bun,,,No Problem 11
